Grape Pudding.
















Ingredients:

 Egg                                                     - 2
 Milk                                                    -2 cups
 Sugar                                                  - 6 spoons
 Butter                                                 - 1 teaspoon
 Vanila Essence                                  -1 teaspoon
 Grated nutmeg                                 - ¼ teaspoon
 Nuts                                                     - ¼ cup
Kismis                                                  - ¼ cup

Grape juice                                        -  3 cups
Sugar                                                   - 2 Table spoons
Ghee                                                    - 1 Teaspoon
Maida                                                  - 1 Teaspoon

Method.

Pudding.

Beat egg. Add milk, sugar, butter, vanilla essence and nutmeg. Apply butter in a pudding mould,  pour the mixture and add the nuts and kismis. Cover the mould  and cook in steam. Allow natural cooling.

Grape syrup. 

Mix grape juice,sugar,ghee & maida. Heat a pan,pour the mixture,stir continuously till it becomes a semi thick syrup.Allow natural cooling,garnish the pudding.Also spread some grapes around the pudding.Refrigerate for two hours and serve.

Chocolate Cake.



















Ingredients.

Eggs                                     4
Flour                                    250 gm.
Sugar                                   250 gm.
Butter                                  250 gm.
Cocoa                                   2 table spoon
Vanilla essence                   1 teaspoon
Baking powder                    1 teaspoon

Sift flour and baking powder together. Cream butter and sugar till it becomes fluffy. Whisk egg. Add flour to it and whisk again. Add butter, sugar, vanilla essence and cocoa and whisk again. Grease a cake tin. Pour the mixture, bake at 180 degree C in a pre-heated oven for 45 minutes. Remove from heat and allow to cool.

Chocolate Icing.

Icing sugar            1 cup
Cocoa powder       2 Table spoons
Butter                          40 gm.
Milk                             1 Table spoon.
Chocolate essence     1 Teaspoon.

Method.
Sift  icing sugar and cocoa together.Add butter, milk and chocolate essence.Mix well.
Beat for two minutes.Apply on cake.
Spread peanut pieces on top.

Cake.








Ingredients:
Maida.                      120 gm
Sugar.                      100 gm.
Egg.                           3
Vanilla essences    1 teaspoon.
Baking powder.     1 teaspoon
Baking soda.            1/2 teaspoon
Sunflower oil.          100 ml 
Whipping cream.    200ml
Sugar syrup.              100 ml

Beat eggs.
Add vanilla,beat well.
Add sugar,beat well.
Add sunflower oil,beat well.
Add dry ingredients,stir well.
Bake in 180° pre heated oven for 45 minutes.
Allow to cool.
Beat whipping cream to stiff peaks.
Layer the cake.
Apply sugar syrup.
Apply whipping cream.
Repeat the process.
Cover the cake with whipping cream.
Decorate with suitable nozzles.
Allow to set in refrigerator for 2 hours before use.

Beetroot Kesari.




BEETROOT KESARI

Ingredients:
    
 1. Ghee /Vanaspati                       -1/2 cup
    
 2. Rava                                            -  1 cup

3. Grated beetroot                          -1 cup
         
 4. Water                                           - 1 ½ cup
  
   5. Sugar                                           -1 cup
           
 6. Cardamom powder                    -   1 pinch

Method

Heat ghee in a pan, add rava and roast well. Add grated beetroot, roast well. Add water, cook in a low flame.
Add sugar and roast. Add cardamom powder when the mixture becomes thick and stir well. Add the balance ghee and stir. Remove from heat. Apply some ghee in a tray, spread the mixture and level. Allow natural cooling, cut into pieces, garnish and serve.

Rava halwa.





Rava – Apple Sweet.

Ingredients:

 1. Rava                               - 500 gm
            
2. Ghee  /Vanaspati                   -2 big spoons.

3. Ground & sieved apple - ½ cup
       
4. Hot water                           -2 cups
   
5.  Sugar                                 100 gm
          
6. Milk                                         - 1 cup / ( 3 teaspoons cornflour mixed in 1 cup water.)
      
 7. Cardamom powder            - 1 pinch

Method.

Heat ghee in a pan and fry rava. Add sieved apple and hot water .Stir well. When it becomes dry add milk and sugar. Stir well again. Keep in a low flame, add cardamom powder, stir well and roast. Remove from heat. Apply ghee in a tray and spread the mixture and level. Allow natural cooling, cut into pieces, garnish and serve.

Tapioca Cutlet.










Tapioca Cutlet



Ingredients:

1. Cooked and
   mashed tapioca                : 2 cups

2. Sliced onion                      : ½ cup

3. Sliced ginger                      : 1 spoon

4. Sliced green chilly              : 1 spoon

5. Lemon juice                        : 1/2 spoon

6. Salt                                        : 1 small spoon


7. Filling:
  Sliced onion                  : 1/4 cup

Tamarind                           : 1 small ball

Fried red chilly                   : 4

Salt                                        : little

8. Oil                                      : 1 spoon

9. Bread powder                  : ½ cup

10. Egg                                   : 1

( Instead of whipped egg, cornflour- water mix can be used for vegetarians.)

Method

Mix one to six Ingredients well. Make chutney with the seventh ingredients. Add oil and stir well.
Make balls with the tapioca mixture .Make a hole and fill the filling. Shape to cutlets. Beat up egg, dip cutlets in it, cover with bread powder and fry.
Garnish with cucumber, carrot and green chilly.

Eggless Cake.
















Ingredients
Condensed milk              -   200 gm
Sugar                               -   100 gm
Butter                               -   100 gm
Flour                                 -   300 gm
Milk                                  -   400 ml
Baking Powder                 -   1 teaspoon
Baking Soda                      -  1/2 teaspoon
Cocoa Powder                   -  100 gm
Chocolate Essence            -  1 teaspoon

Mix the ingredients well. Bake in a 10 minutes pre heated oven in 180 degree C for  30-40 minutes.

Icing.
Butter                 - 200 gm
Sugar                  - 400 gm
Vanilla Essence  - 1 teaspoon
Pink colour         - 1 drop
Blend the ingredients well.Use a piping bag & suitable nozzles to decorate.



Mango Payasam.




Ripe mango pieces            -  100 gm.
 First coconut milk      -1 cup
Second coconut milk     -  1 cup
Jaggery                           - 50 gm
Ghee /Vanaspati                    - 1 teaspoon
Cardamom powder                    - 1/4 teaspoon 
Nuts                                    -10 gm.   
Raisins                                - 10 gm. 

Melt  jaggery in the second coconut milk.Sieve and put mango pieces & boil.When it is cooked well
mash the pieces and add ghee and stir well.Add the first coconut milk, stir again and remove from 
heat.Add cardamom powder.Heat a pan,pour some ghee,fry nuts and raisins and add to the Payasam.

Poverty, caste, creed, religious thorns!!




How curious the early days! The adolescence!
Hide and seek, hard work, laziness!!
Assessments, little little footsteps,
Success or failure, life’s ladders!!

How mesmerizing the teens!! The adolescence!!
The beads and buds of love, peep in heart’s twigs!!
May bloom, may wither, still, memories,
Sleep in saffron case, in eternal caskets!!

How sweet the salad days!! The adolescence!!
As a drizzle of honey left to dissolve in tongues!!
Is it a drop, the enchanting nectar?
In drooping branchlets, in dense deodar??

How fragrant the spring-time!! The adolescence!!
It smells the valleys where the May time blossoms!!
Flourished with flowers, lustrous even faded,
Creepers fill loveliness, as in sky, rainbows painted!!

How glittering the greenness! The adolescence!
As thousand orions lighted in high space!
Can’t you see, the glistening milky ways?
The glaze of fully filled ghee lamps…

Concealingly passed us the vineyard,
Invisibly shined adolescence in each ward,
Mysteriously, the rhythm of age, the sweet swing,
The fragrance of virtue, showered delightful spring!!

Realizing only now, ripening the leaves soon…
Let me go again, before falling down….

Munnar Hill Station.

Munnar in the Chill.


 In the Western Ghats of Kerala, Munnar is situated at nearly 1,600 meters above sea level. The air turns crisp and misty even in the middle of the day is a fantastic experience.

The name  Munnar comes from the Malayalam word for "three rivers,"the Muthirapuzha, Nallathanni, and Kundala streams meet.  

The tea gardens attract you first of all.Rolling hills on lush greenery covered in neatly clipped green rows stretch out in every direction. 

Munnar is the home to more than 50 tea gardens and estates,  and walking through them feels like stepping into a living postcard.

It was a pleasant experience when we were there;
 the smell of the leaves were in the atmosphere,
the cold morning air gave us a fresh  beginning.

We Explored Tea gardens and tea museum ,the Tata Tea Museum offers a close look at how tea is processed, along with tastings at the estate. 

Mattupetty Dam  is a quiet spot surrounded by hills, good for a short boat ride.The cool water in the dam cherish our happiness and joy.

Echo Point is  a scenic viewpoint known for its natural echo, where shouting across the valley actually gets you an answer back. A person is there to take our family pictures in the background of nature.

  
Eravikulam National Park  is  home to the rare Nilgiri Tahr, with trails winding through grassland and forest. A good view of Munnar hill ranges can be seen from the highest points of the park.

Summer (March–June) brings the most pleasant weather, with temperatures between 15°C and 25°C
 ideal for sightseeing. Cool Breeze welcomes you to the immeasurable depth of natural beauty.


 Winter (December–February) turns colder, around 5°C to 15°C, with mist rolling over the hills.It appears like white pearls among green hillocks.

Gram Flour Laddu
























Gram Flour Laddu
Gram Flour                           - ½ kg
Sugar                                      - 1 kg
Water                                     - ½ cup
Cardamom Powder             - ½ teaspoon
Nuts, Raisin                          - 100gm
Oil                                            - ½ cup
Food colour- green               - ¼ teaspoon

Add a little water to sugar, boil it to make a syrup.
Add some water to gram flour and make it a loose paste. Mix colour.
Heat oil. Pour the gram flour mixture to it through a sieve.
Within 3-5 minutes it will become small balls, then take it and put in sugar syrup.
Allow to natural cooling. Make balls of laddu, roll in sugar, garnish with cherries.
